Ingredients:

3 Tbsp. of extra virgin olive oil

2 leeks, thinly sliced

5 cloves of garlic, minced

1 russet potato, peeled and chopped

1 head of cauliflower, cut into florets

Dash of salt and black pepper

2 cups of low sodium chicken broth

Chives, chopped and for garnish

Bacon, crumbled and for garnish

Directions:

In a pot set over medium to high heat, add in the olive oil. Add in the sliced leek. Cook for 5 minutes or until soft. Add in the minced garlic and cook for an additional minute.

Add in the chopped potatoes and cauliflower florets. Stir well to mix. Season with a dash of salt and black pepper.

Add in the low sodium chicken broth. Allow to come to a boil. Lower the heat to low. Cook for 20 minutes or until the cauliflower florets are soft.

Remove from heat and pour into a blender. Blend on the highest setting until smooth in consistency. Pour back into the pot and allow to bring to a simmer.

Season again with a dash of salt and black pepper.

Serve immediately with a garnish of chopped chives and crumbled bacon.
